Ethiopia is the birthplace of coffee, and the Mirado Station in Sidama's highlands is one of its finest modern expressions. Run by the Dukamo family through the award-winning Daye Bensa operation — a consistent Cup of Excellence performer — this lot uses the JARC 74158 varietal grown at 1,800–2,200 MASL, one of the highest growing altitudes in Ethiopian coffee production. The slow development at altitude concentrates the natural fruit sugars that define Ethiopian naturals.
The natural (dry) process dries the whole coffee cherry on raised beds, shaded from direct sunlight for approximately 20 days. This careful, slow drying unlocks the signature blueberry and plum character that makes Ethiopian naturals legendary — rich, sweet, and deeply complex. At Pangea, we roast at our medium 44% profile to preserve that fruit depth while keeping the cup smooth and stomach-friendly.
