The Hard Part About Low Acid Light Roast

Here's the honest version: light roasts are usually the sharpest coffee you can drink. Roasting breaks down the compounds that make a cup taste bright and edgy, so the less you roast, the more of them survive. That's why almost every low-acid brand sells dark roast only — it's the easy way to get there.

We didn't want to give up light roast, so we solved it at the source instead. Hope is built from lots chosen specifically for naturally lower acidity, then roasted with a longer, gentler development to round the cup without flattening the florals. It's more work and it limits which lots we can use — which is why Hope rotates rather than staying the same year-round.

Expect — floral aromatics, stone fruit, citrus, clean finish
