What Is Low Acid Coffee — And Is It Right for You?

Low acid coffee is coffee selected, processed, and roasted to minimize the compounds that make a cup taste sharp and sit heavy — particularly the chlorogenic acids naturally present in all coffee beans. Roast level matters as much as origin: darker roasting degrades many of those compounds, which is why our dark roasts drink smoother than their intensity suggests.

Most people assume a coffee's pH tells the whole story. The research points elsewhere. Roast chemistry, chlorogenic acid content, and the compounds produced during roasting all influence how a cup drinks — which is why two coffees with similar pH can feel completely different.
