Southern Mexico — and Chiapas in particular — sits right on the border with Guatemala's legendary Huehuetenango region. The altitude, the heirloom varietals, the rich volcanic soil — all the same building blocks that produce some of the world's most celebrated Central American coffees are right here. But most people don't know it yet.
Hope – Mexico Montebello is sourced from cooperatives in the Los Lagos de Montebello region through a dedicated quality-control program built around varietal selection, careful picking, and precise washed processing. The result is a beautifully approachable light roast — rich chocolate warmth, ripe berry sweetness, and a gentle peach finish — that is also genuinely gentle on your stomach. Mold-free. Allergen-free. Doctor-recommended.

Nestled in the far south of Mexico, Chiapas shares its border — and many of its growing conditions — with Guatemala's celebrated Huehuetenango region. The Los Lagos de Montebello area sits within a stunning landscape of forested highlands and crater lakes, where small cooperative farms have been quietly producing exceptional coffee for decades.
The cooperatives here — including Finca Triunfo Verde and Campesinos Ecológicos de la Sierra Madre de Chiapas — grow heirloom varietals like Bourbon, Typica, and Mundo Novo at altitudes ranging from 1,200 to 1,750 MASL. These are the same classic varietals that built the reputation of great Central American coffee. Combined with a dedicated quality-control program — covering varietal selection, fertilization, picking, processing, and lot assessment — this is coffee produced with genuine purpose and pride.
The washed process is used here, carefully removing the fruit before drying to produce a clean, bright cup that lets the terroir of the Chiapas highlands speak clearly. The result is a warm, approachable light roast that brings chocolate depth, ripe berry sweetness, and a delicate peach finish to your morning cup — with the gentle, low-acid profile that makes it suitable for even the most sensitive stomachs.
"Pangea Coffee offers one of the cleanest, low-acid options for sensitive stomachs — smooth, pure, and allergen-free."
— Dr. Joseph Salhab, Board-Certified Gastroenterologist (@TheStomachDoc)

🛡️ Allergen-Free Guarantee
This coffee is processed in our SPOKIN-verified facility that handles ZERO of the top 9 food allergens (dairy, eggs, fish, shellfish, tree nuts, peanuts, wheat, soy, sesame). Safe for customers with celiac disease, food allergies, and sensitivities.
Most coffee — even premium and organic brands — can contain traces of mold and mycotoxins (toxic compounds produced by mold). These develop during harvesting, processing, or storage, especially in warm and humid conditions. Many people who think coffee upsets their stomach are actually reacting to mold and mycotoxins, not coffee itself.
At Pangea, mold-free isn't a marketing claim — it's a verified process. Every lot we source goes through certified Q Grader inspection on-site at origin, evaluating beans for defects, mold, and quality before anything leaves the farm. We then roast in our SPOKIN-verified, 100% allergen-free California facility under strict clean-room protocols. No mold. No mycotoxins. No compromise.
🔍 Q-Grader Tested at Origin
Licensed Q Graders inspect every lot on-site in Chiapas — evaluating for mold, defects, and mycotoxins before it ships to our roastery.
🏭 Clean-Facility Roasting
Roasted in our SPOKIN-verified, Top 9 allergen-free California facility — zero cross-contamination risk from mold, allergens, or toxins.
📦 Fresh-Roasted to Order
Shipped within weeks (sometimes days) of roasting — not months. Fresh coffee means less time for mold to develop in storage or transit.

Heirloom Bourbon and Typica grown at high altitude with a clean washed process produces a beautifully layered and approachable cup. The chocolate note comes first — warm, smooth, and grounding. It gives way to a wave of ripe berry sweetness, followed by a soft, delicate peach finish that lingers long after the last sip. It is the kind of light roast that feels as comfortable and welcoming as a cool morning at altitude.
Tasting Notes
*Tasting notes describe the natural flavor compounds in the coffee — not added ingredients. Our coffee contains only 100% pure coffee beans with no flavoring or additives.
This is a wonderfully versatile coffee — it shines equally well in a pour-over or a simple auto drip. The chocolate and peach notes carry beautifully through almost any brewing method. For our complete low-acid brewing guidance, visit our Complete Brewing Guide.
Pour-Over (Recommended)
1:16 ratio, 195–205°F water, 3–4 minute total brew. Pour-over brings out the full clarity of the chocolate and peach notes with a clean, sweet finish. Grind medium-fine and bloom for 30 seconds. This is where Mexico Montebello truly reveals its character.
Auto Drip
1:15 ratio, 200°F water. Auto drip is an ideal everyday method for this coffee — the chocolate warmth and ripe berry sweetness carry beautifully through a standard drip setup. A reliable, gentle morning cup that is easy on the stomach and rich in flavor.
Espresso
1:2 ratio, 25–30 second extraction. Produces a warm, fruit-tinged shot with chocolate depth and a smooth, low-acid finish. Excellent as a standalone shot or paired with your favorite milk for a gentle, satisfying latte.

Washed process (also called wet process) means the fruit surrounding the coffee bean is removed before drying. This results in a cleaner, brighter cup that clearly expresses the character of the bean and the terroir it came from — without added fruit fermentation flavors. For Hope Mexico Montebello, the washed process highlights the chocolate depth and peach sweetness of the Bourbon and Typica varietals with exceptional clarity and a clean, smooth finish.
Pour-over highlights the chocolate and peach notes with the most clarity — try a 1:16 ratio at 195–205°F. Auto drip is an excellent everyday option that carries the chocolate and berry warmth beautifully. For espresso, aim for a 1:2 ratio with a 25–30 second extraction. Store in the resealable bag at room temperature, away from direct sunlight, heat, and moisture. Avoid placing in the refrigerator or freezer once opened, as condensation can affect flavor. For best results, grind just before brewing. Whole beans stay fresh for 2–4 weeks after opening when stored properly.
The cooperatives in this region — including Finca Triunfo Verde and Campesinos Ecológicos de la Sierra Madre de Chiapas — practice ecologically responsible farming with a strong emphasis on sustainable and clean cultivation methods. Our full commitment to clean coffee goes further — every lot is tested for mold, mycotoxins, and defects by certified Q Graders before roasting. Yes — every lot is evaluated by certified Q Graders on-site at origin in Chiapas for mold, mycotoxins, and defects before it ever leaves the farm. It is then roasted in our SPOKIN-verified, 100% allergen-free California facility under strict clean protocols. Most coffee brands — even premium ones — do not test this rigorously. Learn more in our Mold-Free Coffee Guide.
Yes — many people who believe coffee upsets their stomach are actually reacting to mold and mycotoxins present in conventionally processed coffee, not coffee itself. Mycotoxins are toxic compounds produced by mold that survive roasting. Symptoms can include bloating, nausea, headaches, brain fog, and acid-like discomfort. Choosing a verified mold-free coffee — like Hope Mexico Montebello — is often the key to finally being able to enjoy coffee without side effects. Read our Sensitive Stomach Coffee Guide for more.
Most brands that claim to be mold-free test finished products in a lab after roasting. We go further — our Q Graders evaluate every lot on-site at origin before it ships, we roast in a SPOKIN-verified Top 9 allergen-free dedicated facility, and we ship fresh within days of roasting to minimize any post-roast storage risk. We are also the only SPOKIN-verified allergen-free coffee brand in the nation, combining mold-free, mycotoxin-free, and allergen-free in a single verified product. Learn about our full approach in our Clean Coffee Guide.
