Single Origin Story
Sourced directly from the Coto Family's Finca El Colemnar — nearly 50 years of sustainable farming
In 1977, Samuel Coto Escobar purchased Finca El Platanillo — the beginning of a family coffee legacy in Guatemala. By 1985, his son Stuardo Coto took over and redirected the family's focus toward ecosystem preservation, community impact, and exceptional quality.
Finca El Colemnar, one of the Coto Family's newest estates, sits in the heart of Antigua — Guatemala's first coffee-growing region and its first Denomination of Origin. Coffee here has been cultivated since the 17th century, originally in Jesuit convent gardens. Today it's one of the world's most celebrated origins — known for complex, clean cups with vibrant acidity and distinct character.
This lot is shade-grown under avocado and Gravilea trees, washed with a 24–36 hour fermentation to remove mucilage, then sun-dried for approximately one week. The result is a clean, vibrant cup that honors Antigua's coffee heritage while meeting the needs of low-acid, allergen-free drinkers who don't want to compromise on flavor.
"Pangea Coffee offers one of the cleanest, low-acid options for sensitive stomachs — smooth, pure, and allergen-free."
— Dr. Joseph Salhab, Board-Certified Gastroenterologist (@TheStomachDoc)
Pour-over is where this coffee truly shines — it highlights the grape and berry complexity best. For complete low-acid brewing guidance, visit our Complete Brewing Guide.
Pour-Over (Recommended)
1:16 ratio, 195–205°F water, 3–4 minute total brew. Highlights the grape, berry, and floral notes with a clean, bright finish. The best way to experience what Antigua light roast can do when it's grown and processed right.
Auto Drip
1:15 ratio, 200°F water. A gentle, approachable cup for everyday morning drinking. Hope Guatemala Colemnar's clean sweetness carries beautifully through a standard drip setup without any bitterness or acid edge.
Espresso
1:2 ratio, 25–30 second extraction. Produces a bright, fruit-forward shot with red apple and berry clarity. A lighter, more complex espresso experience — especially good over ice or as the base for a morning milk drink.
