It is our light roast: Roaster's Choice beans, hand-selected each week for freshness and a low-acid profile, so the origin can change between batches while the roast level and our standards stay the same.

How it tastes

Floral and fruit-forward, with a bright, clean finish and a light-to-medium, smooth body. It shines in pour-over, Chemex and drip.

How to brew it

Pour-over with a paper filter brings out the floral notes: 15g of coffee to 240g of water at 200 to 205°F, poured slowly in circles. For espresso, try Bold Respect, our dark espresso roast. The brewing guide covers cold brew and every other method.
