Coffee — even expensive specialty and organic brands — can contain traces of mold and mycotoxins. What we don't do — and why

We do not send our coffee for laboratory mycotoxin analysis, and we won't say we do. Mycotoxins such as ochratoxin A are odourless, tasteless and invisible — no palate on earth can detect them, ours included. Any brand claiming to "taste-test" for mycotoxins is describing something that cannot happen.

What a Q Grader genuinely detects is mold damage: the musty, fermented, phenolic defects that accompany mold-affected beans, plus visible damage in the green coffee. Green defect detection is a formal component of Q Grader certification. That is a real, trained, standardised skill — and it is precisely what we use it for.

There is also a practical reason batch lab reports don't fit how we work. An assay takes one to two weeks to return. We roast in small batches and ship within days, so a batch would be in your cup long before a certificate about it existed. Brands that publish a batch certificate alongside the bag are generally holding that batch in a warehouse while the paperwork catches up. That's a legitimate way to run a coffee company — it's simply the opposite trade to ours. Every bag we ship carries its roast date, so you can check which side of that trade you're getting.
