How New Lots Get Here

We buy by the cup, not the country. Samples arrive, we cup them blind against our standard, and most get passed on — including plenty from origins we love. Recent rejections have included lots that looked excellent on paper and cupped harsh in the room. Taste is the filter, and it's not negotiable.

What survives becomes a limited release. Because coffee is seasonal and we roast weekly in small batches, this collection turns over constantly. If something here catches you, it's worth grabbing — the same lot may not be back.
