Start with 18 grams in, 36–40 grams out, in 25–30 seconds for a classic double shot. That ratio brings out the cocoa and molasses notes and builds a thick crema.
Fill the basket with medium-fine grounds, use medium heat, and keep the lid open to watch the extraction. Pull it off the heat as it starts to gurgle for the smoothest, least bitter result.
17–20 grams of coffee, 220ml of water just off boil, stir 10 seconds, steep 90 seconds to 2 minutes, then press slowly. Concentrated, espresso-style, with real body.

Most low acid coffees get there one of two ways, and both cost you flavour.
Chemical treatment: some brands use chemical processes to strip acids after roasting. That can leave metallic or flat notes behind.
Light roasting: others simply under-roast. It reduces some acidity but creates a sour, underdeveloped cup that dark roast drinkers find disappointing.
