What Mold-Free Coffee Actually Means

Mycotoxins in coffee aren't created in your kitchen or on a shelf — they form at origin, during drying, fermentation, and storage, long before a bean reaches a roaster. Coffee that's dried properly to safe moisture levels and stored well carries very little risk. Coffee that isn't, does.

That's why our approach starts with sourcing rather than marketing. We buy specialty-grade lots, which are defect-sorted — and defective beans and husks are where the bulk of contamination concentrates. We work with importers and roasting partners who handle green coffee properly. And we roast dark enough, on the roasts where it matters, that the process itself works in our favor.

Why Most Coffee Isn't

Commercial coffee is blended at volume from many origins, graded loosely, and often sits in warehouses and on shelves for months. Every one of those steps is an opportunity for the conditions that create problems. Specialty coffee, sorted and roasted to order, simply doesn't go through the same journey.
